Have you planned out your 4th of July Menu yet?
With it only being a few days away, there is still time.
Most every B.B.Q. has a Macaroni Salad present.
So I thought why not make it as healthy as possible?
That's when I found a great recipe over at Isabelle at Home.

She is all about making healthy choices.
Lighter Macaroni Salad
*recipe adapted from Isabelle at Home*
8 0z. Cooked Macaroni Noodles (I used Whole Wheat)
2 Hard Boiled eggs
3/4 C. Fat Free Sour Cream
4 TBSP Fat Free Ranch Dressing
1 TBSP Frank's Hot Sauce
2 Fat Free String Cheese~ cut into small pieces
2 Dill Pickles~ finely diced
1 Green Onion~ finely diced
1 Carrot~ shredded/diced
1 Jalapeno Pepper~ seeded/minced
Salt/ Pepper to taste
Mix together Sour Cream, ranch, hot sauce, salt and pepper.
Add in the eggs, cheese, pickles, carrot,
green onion and jalapeno. Stir in Cooked noodles.
Stir until all noodles are coated.
Chill for an hour before serving.
Picnic Perfect!

I found this on Amee's Fit Fridays. I love the use of FF Sour Cream (yum!) instead of mayo. It could be made even healthier with the use of a multigrain pasta - I love Barilla Plus.
