Now these Bars are a great snack
to add to your kids lunch box's.
This recipe makes a large batch.
One of the nice things about that
is these bars freeze very well.
*These bars are also big hit at Bake Sale's.
Sugar and Spice with Everything Nice Banana Bar's
2/3 C. Shortening
1 C. Sugar
1 C. Brown Sugar
1/2 tsp Salt
2 tsp Baking Powder
1/8 tsp Nutmeg
1/8 tsp Cinnamon
2 C. Flour
1 tsp Vanilla
1 Eggland's Best Egg
4 ripe Banana's-mashed
1 C. Mini Chocolate Chips
Preheat oven to 350
In mixing bowl cream together the sugar's and shortening.
Next add in the salt, baking powder, nutmeg, cinnamon and vanilla.
Mix together for 30 seconds. Then add in the egg and banana.
Finally add in flour slowly, then the chocolate chips.
Spread evenly into a sprayed sheet pan.
Bake for 20-25 minutes.
Cool completely before cutting or adding frosting if desired.
*To freeze: cut into bars and wrap in plastic wrap, store in a ziplock*

Anything that freezes well is my friend! After I had our second child I think his older brother lived off of frozen muffins and frozen uncrustables for about a month before I figured out how to juggle 2 kids.
I don't think it's possible to go wrong with chocolate and bananas. Wish I had one of these for lunch right now!
