I can NEVER thank my Mom enough for raising me in a home where
she took pride in cooking and baking for her family.
With (7) kids in the home, my Dad teaching school,
Mom worked as a teacher's aid everyday, then came home
to teach Tap Dancing and Acrobatics's classes.
I remember there being at least 2 (hour long)
classes each day after school.

With Both parents busy,.... my Mom was VERY CLEVER!!
She came up with a plan to not only lighten the
stress of the preparations of meals but also made
them into a learning experience for we children as well.

The "Great Mom Idea" as I now call it,
was a simple way of teaching (us kids)

how to plan, plus prepare a meal.
With there being (7) day in a week ....and (7) kids...
each child was giving a day where they were in charge
of choosing what they wanted to fix for Dinner.

Some of the younger siblings were "paired" up with an older sibling.
Usually that made it so Mom was in charge of weekend meals.
(You remember those Sunday Roast dinners!
YUM!- she was smart in this too....I am sure she didn't
want to have Hot Dogs as the Sunday Dinner! ha,ha)

Anyway we then had to write out the menu and make a list
of what was needed in order to make that dish.
If we didn't have it in the pantry it was our job to make
sure it was on the shopping list.

You get the idea of just how SMART this was!
Some of the siblings hated this, you could always tell who
wanted to make dinner as easy as possible
with no effort put into it.
That is when the dinner was hot dogs or frozen pot pies.
Then there were others who would want to

And to this day I am still the one who LOVES to
cook or bake for family get togethers.

She is a WONDERFUL example to me!

Now what does this have to do with this cookie recipe?

Well just giving you a little bit of a "peek" inside my Mom's busy life.
I remember Mom making these cookies around Christmas time.
Usually starting them later in the evening,... with all of us kids
wanting them to hurry up and be done before we had to go to bed.
NEVER HAPPENED!
Mom would place them in the oven then start getting us all ready for bed.
The next morning we all would want to have a cookie!
Mom would act all worried and upset telling us that she had totally
"forgotten the cookies" having left them in the oven all night.
Low and Behold.....they didn't burn! Turned out Perfect!
So go ahead and make up a batch of the cookies tonight
for your family then totally "Forget" them!
Forgotten Cookies
*This will make 2 doz. 1 inch cookies*
2 Egg Whites
1/8 tsp. Salt
2/3 C. Sugar
1 C. Mini Chocolate Chips
1 C. Chopped Nuts-*optional
Preheat Oven to 350
In mixing bowl start beating your egg whites and salt on high
until stiff. Keeping mixer on high speed slowly add in the sugar
a little at a time until gone. Then you fold chips and nuts in.
You can now either "pipe" or drop them onto a foil lined
and lightly sprayed sheet pan. Finally TURN OFF the oven.
Place the cookies into the oven, and forget them for at least
6 hours or over night. NO PEEKING!!

Oh Lark, I love this post!!! Sounds like you & your mom had a very special relationship!! I like to think that my mom & I are the same way. What's even better is that my mom made these cookies for me when I was growing up!! I almost fell off the chair when I saw the cookies. They are SUPER sweet. I could never eat too many of them, but she made them every year for me... even when I was in college. She would send a big tin back for the Spring semester so I could share with my friends. Great post!!
Moms are the absolute best! What a great cookie recipe. I want to try these. I had a recipe similar to this years ago called Mrs. Jack's Kisses. I had been searching for it. xo

You are so right...your Mom was a brilliant woman to want to teach her kids to be self-sufficient by learning how to cook. Cooking & baking are life long needed skills and it's so sad that more and more families are losing these skills and not teaching them to their kids! Have a wonderful week! Angie xo

These are a family tradition in our house. I am 42 and cannot remember one Christmas when we didn't have them, my mom turned over the baking of these to me about 10 years ago and I haven't let my kids or nieces and nephews down yet. I love this simple but delicious tradition we have.
