Hot Lemon Syrup Soaked Cake

This picture say's it all....this
cake is SUPER moist and full
of luscious Lemon flavor!
You can bake this cake as a full
bundt cake, a 9x13" or as
Mini- bundt cakes as I did.
 
Hot Lemon Syrup Soaked Cake
1 (18.5 oz.) Lemon Cake Mix
1 (3.4 oz.) Instant Lemon Pudding
4 Egg's ~ beaten
1/2 C. Water
1/2 C. Oil or Applesauce
1 (12 oz.) Lemon Lime Soda~*I used Sprite
1/2 C. butter
1 1/2 C. Sugar
1 TBSP. Lemon Juice
1 tsp. Lemon Zest
 
Preheat oven to 350
In a mixing bowl combine the cake
mix, pudding mix, eggs, water, oil
and 1 Cup of the soda pop.
*(reserve remaining soda pop)
Beat ingredients for 3 minutes.
Pour into the desired size/shape
of pan that has been greased.
Bake for 45-55 minutes
or until the cake is cooked through.
While cake is baking you will combine the
remaining soda pop, butter, sugar,
lemon juice and zest in a sauce pan.
Stirring continuously until the sugar
has dissolved, bring to a boil for
2 minutes. Remove from heat.
*If you are making mini or a full
bundt cake you will need to let the
cake cool slightly before removing it
 from the pan to poke holes into the cake,
 and pour the hot syrup over top.
 For a 9 x 13" pan,you can poke holes into
 the warm cake as soon as you take it from the oven.
Then proceed to pour the hot syrup
 evenly over the entire cake.
Let the cake cool completely at room temperature.
