I named these crackers this because even though I don't drink wine...
I can see these "up scale" crackers plated along side some
fresh fruit and cheese at a Napa Valley Winery.
Simple to make.
And several different cheese/herb combination's
you can make to fit every one's taste bud's.
Add together in a mixing bowl:
1/4 C. Margarine or Butter: softened
2 C. Fresh grated cheese *options below*
1 tsp. Fresh chopped herbs * options below*
1/2 tsp. pepper
dash of curry or Oregano
Blend until smooth then add the following:
1 1/4 C. Flour
1/4 tsp. salt
Mix well until all ingredients are blended.
Then shape into a log about 2 inches round.
Place on plastic wrap and roll tightly.
This needs to chill in freezer for 30 minutes.
Preheat oven to 350.
Take chilled dough out of freezer and cut into slices.
Lay down on a lightly greased
cookie sheet.
(when cutting the edges of the cracker may crumble,
just push back together
with your hands.
They will cook up just fine.)
Bake these for 11 minutes, then flip crackers to
other side and continue to bake another 11 min.
Let crackers cool on a foil lined counter for 15 minutes.

Parmesan--Chives
Asiago- Thyme
Cheddar-Bacon
Pepper jack-Cilantro
Cheddar-Basil

I love this recipe. We go to Napa quite often and I always look at their gourmet crackers and they cost an arm and a leg. I would rather make and take my own. I'll have to try this recipe and some of these combos.
