Lark's Chicken Haystacks

This a simple, easy and in under 20 minutes meal.
Now who wouldn't want to have dinner ready in less than a 1/2 hour?
What helps make this recipe fast, is by using instant rice and rotisserie chicken.

You will need:

4 C. Water
4 C. Instant rice

Bring the water to a boil. Add rice, cover and remove from heat. Let set for 10-12 minutes.Until water is soaked up.

While waiting for the rice to cook, I use this time to Chop and dice all the toppings I want.

4 C. Rotisserie Chicken; cubed
3 Tomato's diced
3 Stalks Green Onion; finely chopped
2 C. Shredded Cheese

*You can add any "toppings" you like: Pineapple, Celery, Mushrooms, Cashew's...*

In another sauce pan you need to bring to a soft boil:

4 C. Water
4 TBSP. Cornstarch
5 tsp. Chicken Bullion

You may decide you want more chicken flavor, you can add more bullion if you desire.

To serve just start layering: Rice, Chicken, toppings and finish it with the chicken gravy. This will serve 4-6 people.

I remember eating this at ward break-the-fasts. It's such a great dish since everyone can customize their own.

My Mother In Law makes this dish too, except she calls it Balanese and uses plain boiled chicken. I love the idea of using a Rotisserie chicken, would add such a great flavor!
