I love to make quick breads. And this one is a favorite around our house.
A good Foodie friend of mine Aimee of Shugary Sweets
Posted her recipe a few months ago, I have made this several times since then.
I adapted it just a bit by adding Lemon juice and almond extract.
Orange Loaf w/Citrus Glaze |
1/2 lb butter, softened
2 1/2 cup sugar, divided
4 eggs, room temperature
4 oranges, Zest & Juice (1/4 C. juice)
3 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 cup orange juice, divided
3/4 cup Orange yogurt,
1 tsp Almond extract

2 cup powdered sugar
3 TBSP orange juice
3 TBSP Lemon Juice
Cream butter and 2 cup sugar in a mixer for 5 minutes.
On medium speed, beat in eggs, one at a time. Along with zest from all 4 oranges.
In large bowl, mix flour, baking powder, soda, and salt.
In a separate bowl,mix 1/4 cup OJ (juice of 1 orange),
yogurt plus extract. Add flour and yogurt mixtures alternately to mixer in 3 additions.
Pour into two greased loaf pans. Line pans with parchment paper.
Bake in a 350 degree oven for 45-55 minutes. * or until center it cooked through*
While the bread is baking, In a sauce pan heat remaining 1/2 cup sugar
with 1/2 cup OJ (juice of 2 oranges) until sugar dissolves.
Cool loafs for at least ten minutes in pan. Remove from pans to a wire rack.
Spoon syrup over cakes. Cool completely.
To glaze, mix 2 cup powdered sugar with 1/4 cup Orange Juice and
3 TBSP of Lemon Juice with whisk. Pour over cake and allow to dry.

My mom used to make an orange bread when I was growing up and I loved it - yours looks equally fabulous!
