I am on my way back from Disneyland today!
I hope you all had a fabulous Labor Day Weekend.
I cant wait to tell y'all about our family vacation.
I wanted to make sure that I had a new recipe
for you while I was away.....and this one may not
sound like an extra special dish, but let me tell you
they are WONDERFUL!
Twice Baked Potato's
4 Large Baker Potato's
1/2 C. Fat Free Sour Cream
3/4 Fat Free Shredded Cheese
4 TBSP I can't Believe it's not Butter
Salt & Pepper
2 TBSP Chopped Chives
1/4 C. Fat Free Ranch Dressing
Preheat oven to 400
Bake the Potato's for 45-60 minutes.
Slice tops off of potato's and scoop out the potato's
into a mixing bowl, leaving the skin as the "shell".
Place all but 1/4 C. shredded cheese into the bowl.
Beat on high until smooth.
Scoop filling back into the skin shell.
Top off each potato with the remaining cheese.
Return to the oven to bake for another 5 minutes.
