Snickerdoodle Cookies

I love making Cookies...
There are so many varieties you can make.
Drop, rolled, shaped, bars....so no
matter what you are in the mood for
there is ALWAYS a perfect cookie calling your name.
I think Snickerdoodles can "fit the bill" for
a number of taste buds. They are light, simple, not
to sweet. You can make them crisp or chewy.
Y'all see what I mean? What's NOT to like?
PERFECT SNICKERDOODLES
*This makes a BIG batch*
2 C. Shortening
4 Eggs
2 tsp. Baking Soda
1/2 tsp. Salt
4 tsp. Cream of Tartar
3 C. Sugar
4 1/2 C. Flour
2 tsp. Almond extract

Preheat oven to 350
In a mixing bowl beat together the shortening
and sugar on high until light and fluffy.
Add in the soda, salt, cream of tartar,
almond extract beat again for another minute.
While mixing add in eggs one at a time.
Last  add in the flour one cup at a time.
If dough is to sticky add 1/4 cup of flour at
a time until the dough  is not sticky.
Roll dough into desired sized balls
and roll into cinnamon/sugar mixture.
Place onto a sprayed baking sheet
lightly press down on each ball
with your palm.
Bake for 8 minutes
*bake longer for a crisp cookie*
A cookie for every personality,
