Fresh Lime Curd

If you have never tasted fruit curd
before, this is a fabulous one to
become an addict with!
I have made Lemon Curd, and Orange Curd 
in the past. Up to this point I thought
that lemon was my favorite....well it is
a close call with this Lime Curd!
It is so tangy, and full of the lime
flavor that I couldn't get enough
of it. REALLY, it is THAT GOOD!
 
Homemade Fresh Lime Curd
1/2 C. Fresh Squeezed Lime Juice
4 tsp. Fresh Lime Zest
1 C. Sugar
8 Egg Yolk's
6 TBSP. Unsalted Butter
 
Using a double broiler, bring water to a boil.
Then reduce heat to med./low add in all ingredients
and whisk until thickens. About 3-4 minutes.

Remove from heat, let cool  before storing in
a glass jar. This needs to be kept in the refrigerator.
This will keep for up to 4 weeks.
 
You can add fruit curd
to just about anything.
I mostly use it as a spread or filling,
 in a cake or sweet rolls.
Spread it on top of a bagel or toast.
