  I search all over the internet
 looking for the newest and latest idea's.
 This year I have found

Country Comfort Cook Book Series~ Review

I love cook books!
I cant tell you how many different
cook books I own in my collection.
Every time I travel, vacation or
for special occasions I want to
buy another to add to my addiction.
Mary Elizabeth Roarke
where I am also a contributor)
has Co-Authored several cook books
So of course I wanted to share
a recipe with Y'all from one of these
country cook books.
After thumbing through this book,
I found just what I was looking
forward to making, An old Fashioned Pie!
 
Shaker Lemon Pie
2 Large Lemons
2 C. Sugar
1/4 tsp. Salt
4 Eggs
4 TBSP. Unsalted Butter~ melted
3 TBSP. All Purpose Flour
1 (9-inch) Unbaked Pie Crust
 
Start by washing/drying the lemons.
Cut off ends, slice very thin.
Removing all seeds.
Toss sugar, salt and lemon
slices together. Cover and set
aside at room temperature for 24 hrs.
The next day, preheat oven to 425.
In mixing bowl beat eggs until
frothy. Add in flour and melted butter,
whisk until smooth. Combine
the lemon/sugar mixture.
Pour into the unbaked pie crust.
Bake on cookie sheet to catch
any overflow during baking.
Bake for 30 minutes at 425,
then reduce heat to 350 for another
25-30 minutes.
*You may want to cover edges of crust
with strips of foil to prevent over browning.
Let Pie Cool completely before serving.
This is a VERY Tart Lemon Pie,
a small slice goes a long way.
It was Delicious.

Buffalo Chicken Meatballs~ And A New Rachel Ray Cook Book Revies

I am so happy to let Y'all in on  something
I was asked to participate in and have been
 working on for a couple of weeks now.....
this  is a combined effort and the talent's of several 
of My personal favorite Foodie Blogger's/Friends.
To join in on a Fun "Cook it Forward" project
that is also a Cook Book review for the
New Rachel Ray's Cook Book~
This Cook Book is written in the style
of a Journal...were Rachel listed each month
with a menu of dish's she made on what day.
She also has hand written message's as to what 
her day was like and so forth.
The "Cook if Forward" project asks each blogger
to prepare a recipe from the book,  then tell a little
bit about our day and how we felt about the recipe.
Then choose another Blogger and pass the book 
along for them to do the same .
The recipe I choose was Rachel's
Buffalo Chicken Meatballs

I choose this recipe because I knew it was something
I wouldn't ordinarily prepare, plus I knew My husband
could enjoy eating them while watching his Football
Team play this weekend.
As every weekend I like to be in the kitchen
making several recipes at once.
 I am a pro at multi-task Cooking. :)
This weekend was no different, although I 
did have to make sure I saved some of these
meatballs for a photo, before the hubby devoured them.
If I were to make any changes to this recipe
it would be to add in an egg as a binder,
instead of using a whole cup of bread crumbs.
Other than that, they tasted fine.

Buffalo Chicken Meatball's
1 lb. Ground Chicken Breast's
1 C. Fine Dry Breadcrumbs
1/2 Small Onion~grated
2 Cloves of garlic~ grated
1/2 C. Chopped Flat Leaf Parsley
1/2 C. Franks Hot Sauce
Salt/Pepper to taste
2 TBSP. Butter
Extra Virgin Olive Oil

Preheat oven to 400
Mix together the first (5) ingredients.
Form into 1" balls. Place on a baking sheet,
drizzle with EVOO. Bake for 10-12 minutes.
(I turned them over half way through)
While meatballs are cooking mix the 
hot sauce & butter together in a sauce pan.
After the meatballs have cooked,
toss them in the sauce before serving.
*I went ahead and mixed the Franks sauce
 into the meat mixture, instead of tossing
them in the sauce. It added so much flavor!
I served them along side some 
crisp celery sticks and Ranch dressing.
Now it's your turn to try them out.

Gooseberry Patch Cook Book Review & Give Away


I have been a Fan of Gooseberry Patch for as
long as I can remember. I am always on the look out
for those "Country Style Cook Books".
I have a nice sized collection of them too, (51)
and still counting!  So of course I was beyond
THRILLED when the opportunity came around
for me to Review one of there NEW
up and coming Cook Books.
Gooseberry Patch is also giving a copy

I will give you all the details below.

This cook book has a photo with EVERY recipe!

Just looking at the pictures made me hungry!


It was so hard trying to pick which dish to make.
I decided on making the Pioneer Beef Stew

Pioneer Beef Stew
14.5 oz can Petite Diced Tomatoes
1 C. Water
3 TBSP. quick Cooking Tapioca~uncooked
2 tsp. Sugar
1 1/2 tsp. Salt
1/2 tsp. Pepper
1 1/2 lb. Stew Meat~cubed
3-4 Potatoes~ peeled/cubed
4 Carrots~ peeled/sliced
1 Onion~diced

In a large bowl combine tomatoes with juice, water,
 tapioca, sugar, salt and pepper. 
Mix well; stir in remaining ingredients.
Pour into a greased 3 quart casserole dish.
Cover and bake at 375 degrees for 1 1/2-2 hrs.
Until the beef and vegetables are tender.
Serves 4 to 6

Next up : Toasted Chicken Salad Bagels

Toasted Chicken Salad Bagels
6 c. Cooked Chicken~chopped
2 C. Celery
1 C. Almonds~chopped and toasted
1/4 C. Lemon Juice
1/4 C. Onion~grated
1 tsp. Salt
2 C. Mayo
1 C. Shredded Cheddar Cheese
12 Bagels~sliced
2 C. Potato chips~crushed

In a bowl combine all ingredients
except bagels and chips.
Spread mixture on the bottom halves
of the bagels. Broil for 3-5 minutes.
Sprinkle crushed chips on chicken
mixture. Replace bagel tops.
Serves 12

Gooseberry Patch  Has another "hit" on their hands!
I was very satisfied with the quality of this 
cook book as well as with the recipes shared.

I have been cooking up a storm in this 
Kitchen Aid Aluminum 11" Deep Round Grill Pan.
I have NOT been disappointed!
The first thing I wanted to make in this grill pan
was a nice hearty Steak. I mean after all
it is a GRILL pan right?

Just LOOK at those great grill marks!
Next I wanted to see how it did with a "softer" meat...
So I cooked up some Turkey Burgers.

It worked GREAT!  Plus I wanted to see how it would
do sauteing some onions for the Turkey Patty Melts.

At first I wasn't sure this pan would cook the 
onions evenly due to the "grill" texture, however
when  I lowered the heat of the pan 
the end result did NOT  disappoint.
Onto what I thought was the "seller" of this pan:
THE EASY CLEAN UP!

I was able to just wipe it off with a sponge.
Now that is a cooks dream pan!
